Espresso "Nutella": Why You’ll Never Look Back
Part of why I decided to study nutrition is my feeling that the food industry has lost touch with food, and that corporations don’t seem to care enough about the impact of processed food on health. Foods marketed to kids as part of a healthy breakfast contain far too much sugar, low quality oils, and nutrient devoid ingredients. No wonder one of the most frequent questions I get is about kids, focus and energy levels. Any brain, especially a rapidly growing and developing child’s brain needs healthy fats from good quality oils, and nutrient dense ingredients. Sugar is not only addictive, it contributes to blood sugar spikes, insulin resistance and poor focus.
The Healthiest Nutella Alternative
Sugar free, palm oil free, antioxidant rich, super tasty
Preparation time: 5 minutes
Makes: 2 cups
2 cups roasted hazelnuts
2-3 tbsp espresso beans, ground
1 tsp coconut oil
2 tsp raw cacao powder
1/2 tsp vanilla extract
| In a high speed blender or food processor, add roasted hazelnuts and ground espresso beans. Grind on high until you achieve a creamy consistency. You may need to stop, scrape down the sides and keep blending a few times.
| Add the coconut oil. This will help with the creaminess. Next, add cacao powder and vanilla extract. Blend until very creamy and well combined.
| When it’s smooth and blending evenly, scoop into a glass jar. You can store at room temperature for up to one month.
