Chickpea Chai Blondies

CHICKPEA CHAI BLONDIES

 

Makes: 12-15 blondies
Time: 40 minutes

Ingredients

1 cup canned chickpeas, rinsed, skins removed
2/3 cup peanut butter (this Fatso brand is what I used - it’s DELICIOUS)
1/4 cup maple syrup
2 tsp vanilla
1 tsp cinnamon
1/2 tsp sea salt
1/2 tsp ground ginger
1/2 tsp cardamom
1/4 tsp nutmeg
1/4 tsp baking powder
1/4 tsp baking soda

ICING:
1/4 cup organic icing sugar
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cardamom
Pinch nutmeg
1-2 tbsp nut milk

Method

1. Preheat oven to 350 F. Line an 8x8 baking dish with parchment paper.

2. Use a food processor to pulse chickpeas with peanut butter, maple syrup and vanilla until smooth.

3. Transfer to a mixing bowl and add try ingredients. Mix well to combine.

4. Scoop batter into the baking dish and smooth down evenly. Bake for 22-26 minutes.

5. While blondies are cooking prepare icing by adding all ingredients to a small bowl and whisking until smooth. The icing should be a little thick.

6. Let blondies cool before drizzling with icing. Serve at room temperature or warmed up.

Blondies keep well in the fridge for 1 week.
