Peachy Ceviche


Peachy Ceviche

Makes: about 1.5 cups 

Gluten free


1 cup raw shrimp, de-shelled
1 orange, peeled and segmented
1 grapefruit, peeled and segmented
2 peaches, chopped
1/2 an english cucumber, chopped
1/2 a small red onion, chopped
1 avocado, sliced
1/4 cup fresh cilantro leaves, chopped finely
2 tbsp fresh lime juice
Salt and pepper, to taste



1. | Prepare the shrimp by boiling a large pot of water and adding the shrimp for one minute, or until they turn pink. Remove and quickly place in a bowl of ice water to stop them from cooking further. Set aside.

2. | Peel and segment the orange and grapefruit by cutting along the natural segment pieces, then add to a large bowl. Add the peaches, cucumber, onion, cilantro and lime juice. Mix well. Add a few sprigs of salt and pepper, to taste.

3. | To serve, arrange sliced avocado on the bottom of a dish, then the rest of the ceviche on top. Serve with pita, crackers or tortillas.
