Super Simple Madelines

Are you ready for the simplest cookie recipe ever? No need for sugar, flour or eggs, just grab these three ingredients and a bowl! You don't need a madeline baking tray, in fact these cookies will taste the same circular, square, triangular, you do you!

Simple Madelines

Ingredients

1 cup shredded coconut
1/2 cup lentil flakes (can sub for rolled oats, but these offer high protein, fibre and iron!)
2 ripe bananas
Dark chocolate, for garnish

 

Method:

Preheat oven to 375F. Mash everything together (you can use a food processor or a fork), then scoop into a madeline baking tray (or make circular cookies - just as good)! They are done when they're golden around the edges (the golden lining, I like to say) then sprinkle with dark chocolate when warm.

They are incredible with homemade chia jam as well!
