Sugar Free Spiced Espresso Muffins

Spiced Espresso Hazelnut Muffins
Gluten free, sugar free, dairy free
Preparation time: 25 minutes
Makes: 12 muffins
2/3 cup brown rice flour
1 cup certified gluten free rolled oats
1/3 cup sprouted ground chia (try this brand)
2 tbsp monk fruit sweetener*
1 tbsp aluminum free baking powder
1/2 tsp sea salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp turmeric
1/2 cup espresso hazelnut butter
1/4 cup melted coconut oil
1 tbsp whole chia seeds
Optional: 2 tbsp dark chocolate chunks
| Preheat oven to 400F, and add muffin liners to one 12-muffin tray.
| In a large mixing bowl, whisk together flour, oats, ground chia, salt, baking powder, monk fruit sweetener and spices.
| In a separate bowl, stir hazelnut butter, eggs and coconut oil into each other. When combined, slowly add the dry ingredients into the wet. Whisk to combine well.
| Stir in chia seeds.
| Spoon dough into each muffin slot, and (optional) top with more chia, chopped dark chocolate, and oats. Bake for 15-17 minutes. Test that muffins are completely cooked by inserting a toothpick.
| Monk fruit sweetener is a naturally sweet, sugar free sweetener made from monk fruit juices. The brand linked is about as sweet as natural sugar, so if you’re using another brand, ensure you check the ratio of sweetness to sugar. Alternatively, substitute for honey or maple syrup for a low sugar option.
| Substitute 2 flax eggs for eggs if you want a completely vegan option.
